Easy Orange Pomegranate Chicken

Chicken with pomegranate sauceGetting ready for Purim can be very exciting but time consuming.  Baking for your Mishloach Manot baskets, making sure there are enough Hamantashen left over for your family’s noshing, and creating, buying, sewing or just coordinating your costumes for the Purim festivities can consume most of your time.  However, you still have to eat so here is a simple, delicious and quick chicken dish that uses one of Persia’s favorite ingredients, pomegranate molasses.

 Pomegranate molasses is readily available in Middle Eastern markets and many national chain food stores throughout the country. This sweet/tart syrupy liquid is just concentrated pomegranate juice and it compliments many dishes.  Enjoy!

 Easy Orange Pomegranate Chicken

1 3-4 pound chicken cut into 1/8ths

Kosher salt and freshly ground black pepper

½ cup orange juice

2 tablespoons pomegranate molasses

1 clove garlic finely minced

1 tablespoon finely minced fresh ginger

1 tablespoon extra virgin olive oil

1 tablespoon honey

½ teaspoon ground coriander


  1. Pre-heat oven to 350F.
  2. Place chicken pieces skin side up in a 13 x 9 roasting pan. Sprinkle lightly with salt and freshly ground black pepper.
  3. Combine the remaining ingredients and pour over the chicken.  Turn chicken in pan to coat thoroughly with sauce and return to skin side up in pan.
  4. Roast the chicken for 50 minutes or until skin is a rich golden brown and chicken is tender when pierced with a fork.

Serves: 4.
