2 eggs
2 cups water
¼ cup oil or chicken fat
¼ cup matzo meal
6 ounce package potato pancake mix (or 2-3 ounce boxes of mix)
- In a 2 uart bowl, beat eggs with a whisk or fork until yolks are broken down.
- Add water and oil or hicken fat and whisk until combined.
- Using your whisk or a fork, add the matzo meal and potato pancake mix and stir until all dry ingredients are incorportated and moist.
- Set mixture aside for 5 minutes while you prepare the pan.
- Preheat oven to 400F.
- Grease na 12 cup muffin pan heavily with oil or oil spray.
- Fill muffin cups with the potato mixture.
- Bake for 30-35 minutes until muffins are crispy and golden brown on the outside.
- Loosen with a knife an turn each muffin on its side in the cups to cool and prevent the bottoms from getting soggy.
- Serve with horseradish , if desired (Mr. Wechsler does!)
